Thai Peanut Noodles spice up the New Year

With the new year comes new adventures and fun, new experiments in the kitchen. Here is a very quick and easy sweet and spicy Thai peanut noodle recipe to spice up dinnertime! 

What I love about this recipe is that it only takes 10 minutes to make, which is perfect for a quick lunch or dinner that is filling. The recipe is vegan, gluten free and healthy, so it’s a great win-win for you readers with health related New Year’s resolutions. The rice noodles in the recipe can be found on the ethnic food aisle at Walmart. This yummy recipe was created by Sheenam and Muskaan with The Twin Cooking Project.

Ingredients: 

(This recipe makes enough for two people.)

Rice Noodles:

  • 150 grams rice noodles
  • Salt (optional)

Peanut Sauce:

  • 4 tbsp peanut butter (crunchy or creamy)
  • 2 small cloves of garlic
  • 1 tbsp light soy sauce
  • 1 tbsp sriracha (or any spicy sauce) – use only 1/2 tbsp if you don’t want it very spicy
  • 1/2 tbsp lemon juice
  • 1 tbsp honey (or maple syrup or 1/2 tbsp sugar)
  • 5 tbsp water
  • 1/2 tbsp sesame oil (optional but definitely recommended)

Optional Toppings:

  • Sesame seeds
  • Spring onions or chives
  • Crushed peanuts

Instructions:

  1. Boil the rice noodles per package instructions.
  2. While the noodles are boiling, add all sauce ingredients to a blender and mix until a smooth sauce is ready. 
  3. Pour the peanut sauce over the cooked noodles and mix well. Serve at room temperature, cool or if you want them hot, then cook for about a minute or two on medium flame. Add more water if needed.
  4. Transfer to serving bowls and add some sesame seeds and/or chopped spring onions before serving.
