Comfort food with Camellia Cuisine

Nothing warms the soul quite like a warm, gooey, deliciously sweet cinnamon roll. Made from scratch with a hot cup of coffee, it becomes a morning treat everyone should experience at least once.

Making these rolls of cinnamon-sugary goodness may seem a little intimidating, but one Camellia City cook shares a special recipe that is easier than expected. Born and raised in Greenville, Mary Evelyn Edwards attended the University of Montevallo majoring in home economics. Returning home in 1991, she taught family and consumer sciences at Greenville High School for nine years.

After retiring from the school system, she became the house mother for a fraternity at the University of Alabama. “There I had to hire the cooks and plan the meals. I would sometimes bake cookies or cinnamon rolls for the boys.”

This gifted cook guarantees that this cinnamon roll recipe is sure to please the palate of young and old alike.

“It’s like the ones you buy in the malls,” Edwards added. Edwards’ recipe calls for dry yeast, which can be found at any grocery store, but there’s a twist.

“It’s not like most bread recipes; you do not let these rise the second time. It makes them doughy,” Edwards said.

For versatility’s sake, these rolls can even be frozen for up to a month before cooking, or cooked individually. “I have been making the cinnamon rolls for friends and relatives for years,” said Edwards. So this January, escape the winter’s cold and devote a Saturday morning to making these scrumptious treats.

Ingredients

• 2 eggs

• 1 c. warm milk

• 1 tsp. salt

• 1/3 c. melted butter

• ½ c. sugar

• 4 ½ c. bread flour

• 2 ½ tsp. yeast

Filling

• 1 c. brown sugar

• 2 ½ T. cinnamon

• 1/3 c. butter

Combine milk and yeast until dissolved. Add melted butter and eggs to milk mixture. In a separate bowl mix salt, sugar, and flour. Pour liquid ingredients into the dry ingredients. Turn dough out on to floured board and kneed 5 minutes. Put dough into greased bowl, covering dough with melted butter. Cover with a towel for 1 ½ hours in a warm vented area for bread to rise. Roll dough into rectangle. Spread 1/3 cup butter onto dough and sprinkle with cinnamon mixture. Roll up jelly-roll style and cut into 12 equal pieces (large pieces). Put into greased baking pan with sides of dough touching. Bake 15 min. on 400 degrees. Spread with icing. Enjoy!

Icing Recipe

• 4 tsp. butter (softened)

• 3 oz. cream cheese (softened)

• 1 ½ powdered sugar

• ½ tsp. vanilla

• 1/8 tsp. salt

• Mix together and beat with electric mixer.
